To make egg biryani, I have boiled 7 eggs, peeled them and now we will add 1/4 tsp turmeric powder, 1 tsp red chilli powder and 1/4 tsp salt. We will mix turmeric, salt and chilli well so that its colour comes out better when fried.

Now we will heat 1/4 cup oil in a pressure cooker. We will put onions in the oil, just like we fry for biryani. I have cut the onion into long pieces and have taken 1 cup of onion. We will keep the gas flame high and fry it till it turns brown.

When the color of the onion turns golden brown, we will take it out. This fried onion will go inside the biryani and will also be used for decoration on top. Now we will fry the eggs in oil, we have to fry them slightly shallow. After the eggs are fried, we will take them out.

Now we will prepare biryani masala in oil. We will add chopped onion in it, along with chopped coriander and mint.

I have taken a glass of Basmati rice, you can use other rice as well, you see Basmati jewels look better that is why people mostly use Basmati rice in biryani. The measurement of rice and water in a pressure cooker should be correct, so wash the rice well and keep it aside.

While frying the onions on low flame we will add all types of spices to it. First of all we will add 1 chopped tomato. Now add 1 tbsp ginger-garlic paste, 1/2 tsp red chilli powder, 1/2 tsp cumin powder, 1/2 tsp coriander powder, 1/2 tsp garam masala powder and 1 tbsp biryani masala. If you don’t have biryani masala then you can increase the quantity of garam masala a little.

Now turn off the gas and after the masala cools down a bit, mix curd in it. Curd sometimes becomes fat, add curd only after the masala cools down completely, also add some chopped coriander and mint. Then turn on the gas and cook for 1 more minute.

Keep the gas flame on. Place the fried eggs on top of the spices and spread the washed rice evenly over it.

Now we have to add water, for 1 glass of rice we will take 1.25 glasses of water. If we do not use curd then we will add a little more water, if we use curd, then we will take a little less water than usual. Now add chopped coriander, mint, some garam masala and salt on top. Then add fried onions on top.
Now we will close the pressure cooker and cook it on high flame till 2 whistles come. If you want, you can check the cooker by shaking it after the first whistle. You will get to know if there is water in the cooker. Then we have to check after the 2nd whistle. If there is no water in the cooker, then you can close it and sit. In most of the 2 whistles, the egg biryani is ready. If you do not want to check the cooker by shaking it, then you should turn off the gas as soon as you hear the 2nd whistle. After the pressure cooker cools down, you will open the cooker.

Biryani is ready! The rice is cooked to perfection, it will look just like dum biryani.
Serve the biryani on a plate. You can have curd or onion salad with it. Serve some fried onion on top.
